Ingredients

  • 7 ounce Stir-Fry Rice Noodles
  • 5 cups Boiling Water

Boil water, remove heat, immerse noodles for 4 mins. Drain, rinse in cold water, drain & set aside.

  • 1 teaspoon Salt
  • 1 teaspoon black pepper
  • 1 tablespoon Lime Juice
  • 3 tablespoons Fish Sauce
  • 3 tablespoons Soy Sauce
  • 1 tablespoon Rice Vinegar
  • 1 tablespoon Black Bean Sauce
  • 1 teaspoon Paprika
  • 1 teaspoon Red Curry Paste

In a bowl, combine the ingredients above & set aside.

  • 2` eggs Well beaten

  • 1/4 cup Olive Oil
  • 1/4 cup Meat (shrimp, crawfish,chicken,beef,pork, etc) Chopped small
  • 3 cups Veggies (onion, bell pepper, celery, carrots, etc) Chopped small
  • 5 clove Garlic Minced

  • 1 cup Bean sprouts Drained
  • 1/4 cup Water chestnuts Chopped small
  • 1/4 cup Bamboo Shoots Chopped small
  • 1/4 cup Roasted peanuts Chopped small

Directions

Add the sauce mixture (first 10 ingredients) and stir in the cooked noodles. Stir fry until all the ingredients are well cooked.
Add spouts, chesnuts, shoots, scrambled eggs & peanuts. Mix well to combine.
Serve with lime wedges.
